DIY Lunch Recipe

Today's post is a little less law-related and a lot more lunch-related. As we welcome summer (and hurricane season), we are struck by the fact that is often the season for some of the best fruit and vegetables and our office is not wasting any time! My small team and I actually sat down to a potluck where we enjoyed some of our favorites together. Lunch is always a big deal among us, whether together or apart, and today is no different. We just had to share with you one of our recipes, so please check it out. On today's menu: Fried chicken with cheddar corn bites and an avocado salad; brownies.

 

Today's recipe: Baked Cheddar Corn Bites

 

Ingredients:

1 cup pancake or waffle mix

1 egg, lightly beaten

1/4 cup milk

1 teaspoon canola oil

1 can whole kernel corn, drained

1 cup cheddar cheese, shredded

 

Instructions:

  1. Preheat oven to 350 degrees. Line a baking sheet with parchment paper.
  2. In a medium bowl, combine all the ingredients, except the corn. Mix well. Then add the corn.
  3. Drop spoonfuls of batter on the lined baking sheet.
  4. Sprinkle each with handfuls of cheddar cheese.
  5. Bake for 15 minutes.
